Latte Art 101: Be the Barista at Amman's Coffee Festival

That little heart in your cappuccino isn’t just decoration — it’s proof of two things: well-steamed milk and a confident pour. Watch a skilled barista do it in real time and it looks effortless. Try it yourself and you immediately understand why it’s a skill.
The physics of latte art
Espresso sits in the cup first. The objective is to pour steamed milk through the crema — breaking it into a marbled blend — and then float the microfoam pattern on the surface at the end of the pour.
Two things make it possible:
1. Microfoam. The milk has to be steamed to a specific texture — silky, not bubbly, with tiny bubbles so small the surface looks almost matte and feels like liquid velvet. Too much air and the foam floats separately. Too little and there’s nothing to pour with. The texture is achieved by positioning the steam wand just below the surface and creating a whirlpool motion throughout steaming.
2. The pour. Start high to penetrate the crema and blend, then lower the jug close to the surface near the end of the pour. The microfoam now floats on top and forms the pattern. For a heart: pour until the cup is nearly full, then with one confident motion push through the center of the white circle you’ve created. That splits it into the heart shape.
The learning curve
Hearts come first. Then rosettas (a wiggle-and-pull motion). Then tulips (stacked pours). Most people can produce a recognisable heart on their third or fourth attempt. Rosettas take weeks. Competitive latte art is a different world entirely.
